AUTHOR’S NOTES
A classic simple chicken curry. This method is used with many other dishes.
INGREDIENTS (SERVES 4)
2 lb. chicken thighs cut up in bite-size pieces
2 red onions diced
8-10 cloves of garlic minced
2-inch piece of ginger grated or minced
3 tomatoes diced
1 bay leaf
Salt to taste
1 tbsp. coriander powder
1 tsp. chili powder
1 tsp. turmeric powder
2 tsp. garam masala
3 tbsp. oil
cilantro to garnish
DIRECTIONS
- Take a wide pan. Heat the pan. Add oil. 
- Once hot, add the bay leaf. Stir for 30 seconds. 
- Add the diced onion. Saute till translucent. 
- Add the ginger garlic. Saute till it starts getting some color. 
- Add all the spices except garam masala. 
- Caramelize the onion with the spices. 
- Add the tomatoes. Saute till incorporated, a few minutes. 
- Add the chicken. Saute for 4-5 minutes. 
- Add some water and cover till the chicken cooks through. 
- Add garam masala and cook for a few more minutes. 
- Garnish with cilantro. 
- Serve with roti or nan or rice.
