Basic Chicken Curry

Author's Note

A classic simple chicken curry. This method is used with many other dishes.

Ingredients

  • 2 lb. chicken thighs cut up in bite-size pieces

  • 2 red onions diced

  • 8-10 cloves of garlic minced

  • 2-inch piece of ginger grated or minced

  • 3 tomatoes diced

  • 1 bay leaf

  • Salt to taste

  • 1 tbsp. coriander powder

  • 1 tsp. chili powder

  • 1 tsp. turmeric powder

  • 2 tsp. garam masala

  • 3 tbsp. oil

  • cilantro to garnish

Directions

  • Take a wide pan. Heat the pan. Add oil.

  • Once hot, add the bay leaf. Stir for 30 seconds.

  • Add the diced onion. Saute till translucent.

  • Add the ginger garlic. Saute till it starts getting some color.

  • Add all the spices except garam masala.

  • Caramelize the onion with the spices.

  • Add the tomatoes. Saute till incorporated, a few minutes.

  • Add the chicken. Saute for 4-5 minutes.

  • Add some water and cover till the chicken cooks through.

  • Add garam masala and cook for a few more minutes.

  • Garnish with cilantro.

  • Serve with roti or nan or rice.
